Using dietary fiber is one way to control blood sugar and lipid levels. The fibers used in the food industry are very diverse and are widely used as stabilizers in beverage products.
One type of fiber that is widely used in the food industry is a group of polysaccharides or biopolymers called “gums”. Since pistachio gum (coriander or banuk) may be effective in reducing glucose and fat parameters in patients with diabetes, researchers at Bushehr University of Medical Sciences conducted a study using this substance in the preparation of a type of dough, the effect of this gum They have reviewed.
The results of this study showed that consumption of pistachio gum can lead to lower cholesterol and triglycerides. The findings of this study also showed that consumption of stabilized doug with pistachio gum can reduce fasting blood sugar and glycosylated hemoglobin in patients with diabetes.
According to the researchers, the enrichment of beverages such as unsalted buttermilk with a solution of coriander or mountain gum reduces glucose, cholesterol and LDL-cholesterol in people with type 2 diabetes.
